Lemon Melting Moments

Prep Time: 5 mins Cook Time: 15 mins per batch Makes 36

Ingredients:

  • 250g butter (or DF spread)

  • 55g icing sugar

  • 1 tsp vanilla essence

  • 260 plain flour (or GF SR flour)

  • 50g cornflour

  • 1tbsp Liberty Loves Lemon Powder

Method:

Preheat oven 160c fan

Mix all ingredients with electric beaters until pale

Roll mix into 15g bags

Place on a lined baking tray

and flatten with a fork

Bake for 15 mins

Store in airtight container for 2 weeks
