Lemon & Rosemary Shortbread - GF. DF
Prep Time: 10 mins Cook Time: 15mins Makes 18
Ingredients:
200g Flour (can use SR GF flour)
100g cornflour
100g sugar
200g nutalex
1 tbsp Liberty Loves Lemon powder
1 tbsp fresh/dried rosemary
Method:
Preheat oven 170c fan
Mix all ingredients in one bowl with a blender til just mixed
then use hands to knead together to made sure you have all ingredients mixed
Now either press into a baking tin so its level then mark out feint lines so will be easier to cut once baked
OR roll out on a floured surface and cut out shapes
Using a fork prick each biscuit to help biscuit cook evening (and look pretty)
Place in oven on the middle rack and bake for 15 minutes. Check to see if the top is still soft - if so leave for another 5 mins
Remove from oven and let cool.
Can be stored in an airtight container for 2 weeks - enjoy!
