One pot Spinach, Tomato & Lemon Spaghetti

Prep Time: 5 mins Cook Time: 15mins Makes enough for 4

Ingredients:

  • I pack of spaghetti

  • 1 punnet of cherry toms

  • 1/2 bag of spinach

  • pinch of salt

  • 1ltr boiling water

  • 1 tbsp Liberty Loves Lemon powder

  • Parmesan (optional on serving)

Put all ingredients except spinach in a large high sided fry pan on medium heat - cover for 10 mins.

Uncover and stir with tongs to ensure spaghetti not sticking to bottom of pan - add spinach.

Stir occasionally until spaghetti al dente and water absorbed about 5 mins.

Serve - add Parmesan if required - Enjoy!
